Walnut sap can be harvested without a vacuum pump, but it contains lots of pectin. Once about half of the water has been removed, a film of pectin develops on the surface and this pectin should be filtered out. The only species of walnut we’ve tapped and made syrup from is black walnut (Juglans nigra).
